Anyone here do canning/preserving?

Stranger Come Knocking

Here's my dilemma.  I know (basically) how to can/preserve, etc.  Problem: my husband gets severe migraines and can't have any preservatives, anything citrus (lemon, orange, etc.), tannin (plum, banana, etc.), onions, garlic, anything like that.  There are more, but you get the picture.  I know salt is a huge preservative (salt pork, anyone?), but I don't want it dry out all my veggies.

I'm asking this so I'm prepared for next year and not scrambling.  Anyone have any ideas?

Tricky, only things I can think of would be pickles (anything preserved in vinegar) but I know a couple of people who get migraines from vinegar.  Crystallization, preserved in sugar. Preservation in Alcohol (not sure if this has a specific name.


Or freezing, but I don't thing that's what you meant.

Can't do vinegar either ;_; My fault for not mentioning that.

Sugar sounds interesting >.> I've heard of the alcohol thing but never really looked into it.  Might have to.

Drying is great, but don't want to do it for all of my veggies ;_;


Can't say I've ever smoked veggies.  Cheese, fish, and meat, yes, but not veggies >.>
