In first sentence you missing case ending for subject (-l/-ìl), which is hexapede (evidently plants are eaten be yerik, not hexapedes by plants). So correct version should be:
Pxeyerikìl ayewllit yímom (if you want to express near past or yamom for far past). And for "were eating" we have compound infix ìrm or arm (ìm/am is past, r in the centre comes from er - infix to express action in progress).

Second sentence looks correct - if you speak about three hexapedes. Na'vi makes difference between one, two, three and many, so if you mean more that three, you should use ayyerikit - hexapedes.

Third sentence is not completely correct, as nìn is transitive verb, so it is used with direct object using -t/it ending, not -ur, as you used. So to keep your translation, Na'vi sentence would be:
Toruk-ìl a nìn oel meyerik-it y<ìy>om.
Toruk, which I look at, will eat (in short future) two hexapedes. (Your version sounds little different: The Great Leonopteryx is going to eat two hexapedes and I will look at Great Leonopteryx.)

Another option, even with -ur would be (sometimes there's more ways how to say something):
Toruk-ìl a poru tìng nari (oe) meyerik-it y<ìy>om.
