That explains why the calender ends at this date; When Jake shot the arrow into the calendar (which is made of stone, i presume  ), it cracked and split in half, and the piece that had the remaining dates after today shortly disappeared shortly thereafter without anyone knowing how, thus the calendar ``ends´´ on December 21^st    .
