Why would the dimensions arbitrarily stop at 11? Why couldn't there be an infinite number of dimensions?

Exist more theories which presumed various number of dimension, but all this are still only theories without serious proofs. Maybe will come next interesting theories ...
Relatively known is Kaluza's theory of 5-dimensional spacetime (BTW, interesting solution of problem with dark matter in the universe in this context - it's "common matter" hidden in 4th dimension (hidden dimension, 5th dimension is time) ... but it is only theory), but exist also theory of 541-dimensional timespace  
And also exist one theory which expected that time (yes, time) is two-dimensional ...
